Butter-tomato Spaghetti

If you don’t have a jar of pasta sauce, here’s a really easy recipe to make your own! I didn’t have any chicken, which made this dish fully veg. The cheese is also optional of course, and you can always omit certain ingredients if preferred. 

You will need: 

  • 1 tbsp olive oil
  • 1 garlic clove minded
  • 2 tomatoes diced
  • 1 large red bell pepper
  • 2 onions minced
  • 4 tbsp of butter
  • fresh parsley
  • fresh basil 
  • milk
  • salt & pepper
  • optional: cheese/meat

Cooking time: 30 mins

1) Boil some spaghetti and in a different pan, heat the olive oil and then add in the onions, salt and pepper to taste and leave to soften. Put in the minced garlic and sauté but not for too long. Add in your tomatoes and leave to simmer.

2) Once the mixture has been simmering on a low heat for about 15 minutes, add in the 4 tablespoons of butter (I put 2 instead of 4) and add in some more salt & pepper, as well as the parsley and a dash of milk. Leave again or 15 minutes for the flavours to develop.

3) Stir in the boiled spaghetti, plate up and top with cheese & basil!
